He wanted a pie with a paper-thin crust and edges that bubble up into soft, crisp pockets of salty air. He wanted sauce so flavorful it could stand as a topping all on its own and cheese so fresh it simply had to be made by hand daily.

As for the toppings, well, you’ll learn never to question a true Italian about his pizza toppings. They lie on sacred real estate. Let’s just say, if you’re craving pineapple or shredded carrots, we suggest you look elsewhere.
